This secondary fermentation is what gives champagne its signature effervescence.


The bottles are then aged on their side in underground cellars, allowing the yeast to interact with the wine and create complex flavors. Over time, the bottles are gradually rotated and tilted until the yeast settles in the neck of the bottle. The final step, known as disgorging, involves freezing the neck of the bottle to remove the yeast plug before sealing the bottle with the characteristic cork and wire cage.
